Each bunch of Nebbiolo is hand-harvested and meticulously sorted at the winery before undergoing three weeks of fermentation at controlled temperatures. The wine is then aged for 38 months, with 18 months in traditional wooden Botti barrels, allowing the complex flavours to develop beautifully.
