Rather than sealing there casks and simply waiting to blend the result, unlike other distilleries, Lakes regularly sample every cask, frequently effecting change to evolve an array of intriguing layers of flavour.
Whether moving a cask’s location or transferring our spirit between casks, it is only by knowing each cask intimately, how the flavours are developing and can be blended to complement, enhance, deepen, broaden, or contrast, that we can create the depth and complexity we desire. This age-old art is élevage. It is pro-active involvement demanding patience and time. Hand-selecting the final casks, The Lakes Whisky is married together for up to a year before bottling.
